- The Sterlet is one of the so-called ‘living fossils’. Sturgeons have existed for over 200 million years and have hardly changed since then. They are one of the oldest living groups of fish and were already alive at the time of the dinosaurs.
- The Sterlet is one of the smaller Sturgeon species used for the production of caviar. Although Sterlet caviar is less well-known than that of larger Sturgeon species such as the Beluga, it is still considered a delicacy and has a fine, delicate texture.
- The Sterlet favours cool, oxygen-rich rivers and lakes in Eastern Europe and Asia. It is a bottom-dwelling fish that feeds mainly on small invertebrates. Unlike some of its larger relatives, the Sterlet does not migrate over long distances, but usually stays in its home region.
